Snack Hack: Peanut Butter Mousse

It’s time for another snack hack!

Peanut Butter Mousse (or Almond Butter if you prefer)!!

This hack is one of our favorites because it is so easy to whip up and only requires three ingredients, all of which are reasonably healthy.  It is a super easy, versatile snack to keep on hand for your littles when hunger strikes (and let’s be totally honest, we enjoy it just as much) .  We love making this at the beginning of the week so we can pull it out at a moments notice as a fun, interactive snack to keep the littles happy during the week.

We are big fans of healthy snacks we feel no guilt giving our littles and make us look like super mom’s in the eyes of our children.

Almond Butter, Agave (or Honey), and Coconut Milk

Recipe

  • 1 can full fat coconut milk (organic if possible)  *We used all of the coconut cream on top and omitted about 1/4 cup of the juice at bottom saving for smoothies, etc.
  • 8 oz of salted, natural peanut butter or almond butter (Half a small jar of peanut butter)
  • 2-3 Tablespoons of Agave Nectar or Honey

*By using Honey and Almond Butter this recipe will fit into Paleo guidelines

Use your hand mixer to combine ingredients and pop in the fridge to chill and achieve a mousse texture. It is worth the wait!

Perfect PB/Almond Butter Mousse

We served the mousse buffet style for the kiddos with apple slices, coconut shavings, mini chocolate chips, and Easter sprinkles.  We set up our handy DIY Dropcloth as a picnic blanket and let them go to town assembling their apples and PB Mousse.

We both agree there is a multitude of ways this mousse can be used.  It would be delicious as icing on chocolate zucchini muffins, banana muffins, banana sandwiches, wheat bagels, etc.  (We have big plans to try all of these with the PB Mousse!)  We love this snack hack because, just like the Frozen Yogurt Snacks, it can be stored and used throughout the week.  Enjoy!
